Pecan Varieties

We’ve all bought pecans at one point or another, and usually, around the holidays. But in order to make that award-winning pecan pie at Thanksgiving or Christmas, what should you be looking for in your pecans?

Check out our brief explanations of the species found within our orchards, and which varieties are our best sellers to answer that question.

  • Elliot

Originally found in a homeowner’s yard in Milton, FL, Elliot pecans are the primary choice for foodies and chefs. These pecans are small to medium sized and are renowned for their buttery flavor with a hint of hickory, secondary to their oil content.

  • Caddo

Developed in 1923 by crossing two cultivars in Philema, GA, Caddo pecans quickly grew to one of the best varieties in the southeast. These pecans are medium sized, and are known for their buttery taste like Elliots, secondary to their excellent oil content.

  • Blend

This category of pecans is specific to Heritage Farms. While the majority of our trees are Elliots and Caddo, we do have select other species on property such as Stuart and Desirables. Each year, our blend variety varies depending on specific production of our secondary trees, which act as pollinators for our main trees and as nutrient enrichers for the biodiversity present on Heritage Farms.

  • Petite

While these are truly Elliot species, we here at Heritage feel like they deserve their own highlight and specific bagging. Smaller than the “most desirable” Elliot pecans, these little guys pack a punch of sweet, buttery flavor like no other. One of our personal favorites and the single variety we reserve for family keeping, we have decided to bring them forward to general public. These pecans would be best for snacking, or inclusion in pastry-based products.
